Silk's Favorite Dessert Recipes II
Silk's "Courtin" Cake

They say the way to a man's heart is through his stomach. When you want to serve something special this cake is fast and easy to prepare.

  • 1 pkg Butter Recipe Duncan Hines Yellow Cake Mix
  • 1 stick butter
  • 1/4 cup oil
  • 4 eggs
Beat the above ingredients for 4 minutes.
  • 1 small can of mandarin oranges
Add the juice from the small can of mandarin oranges and mix. Then fold in the orange slices. Bake in 3-9inch greased and floured(or spray with Pam) pans at 350°'s for 15-20 minutes depending on oven.
  • 1 14oz can crushed pineapple with juice
  • 1 pkg of French Vanilla Instant Pudding Mix
Mix until thick
  • 1 large container of Cool Whip
Fold in the Cool Whip and spread topping between the layers and around the sides and top. Keep cake in refrigerator. **Sometimes I will sprinkle with coconut and/or different types of nuts**


Cream Cheese Pound Cake

  • 2 sticks butter
  • 1/2 cup Crisco
  • 1 8oz cream cheese softened
  • 3 cups sugar
  • 6 eggs
  • 1 cup sweet milk
  • 3 cups plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 box instant lemon pudding mix (or French vanilla pudding)
  • 2 teaspoons lemon flavoring( vanilla flavoring if using vanilla pudding)
Cream together butter, Crisco, cream cheese and sugar, and beat until fluffy. Then add eggs one at a time, beating after adding each one. Then add milk, flavoring, baking powder, salt, flour and pudding mix. Bake 1 hour and 20 minutes @325° Really good if you serve slightly warm.


Fresh Apple red ripe applesCake

  • 1 cup cries
  • 3 eggs
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 3 cups self-rising flour
  • 1 cup pecans
  • 2 cups diced apples
Mix well the first 5 ingredients. Then add the apples and nuts. Bake in well greased tube pan for 1 hour @350°'s.


Cream Cheese Pie

  • 1 graham cracker crust pie shell
  • 1 8oz and 1 3oz packages cream cheese
  • 1/2 cup sugar
  • 4 or 5 eggs depending on size
  • 2 teaspoons vanilla
  • 1 small can crushed pineapple, drained
  • 8 oz carton sour creme
Cream sugar and both packages of cream cheese together. Add eggs and vanilla. Pour into pie shell and bake for 20 minutes in a @325° oven. Cool. Then mix the drained pineapple with the sour creme. Spread on the top and bake 10 minutes more. Garnish with more crumbs. Chill 2-3 hours then serve.


Skillet Upside Down Cake

  • 4 T Butter
  • 1 cup Brown Sugar
  • 6 slices Pineapple
  • 4 Eggs (Beaten)
  • 1 cup Sugar
  • 1 cup Flour
  • 2 T Water
  • 1 T Baking Powder
  • 1/2 tsp. Vanilla
  • 1/2 tsp. Salt
Heat butter and brown sugar together in a heavy cast iron skillet until sugar is melted.....Cool. Arrange pineapple slices over mixture. Beat sugar into eggs...add vanilla, water, flour, baking powder and salt (all sifted together). Mix and pour batter over the pineapples. Bake @350° for about 40 minutes...while hot, turn upside down on serving plate. Garnish with whipped cream..serves 6.


Banana Split Cake

  • Mix and mash down in the bottom of a 9x13 dish:
  • 2 1/4 cups graham cracker crumbs
  • 1 stick of butter

    Make a filling of :

  • 2 beaten eggs
  • 1 tsp. lemon juice
    Mix and add:
  • 2 sticks of butter (melted)
  • 1 box of powdered sugar
Beat for 10 minutes in mixer. Smooth filling on top of crust.

Add and spread in separate layers:

  • 1 Large can crushed pineapples (drained)
  • 1 Pkg frozen strawberries (drained)
  • 1 Cup chopped nuts
    Place in refrigerator until time to serve. Then add:
  • 4 bananas (sliced)
    Spread with: 1 Large container of Cool Whip....Top with cherries

Cream Cheese Icing

  • 8 oz. cream cheese, softened
  • 16 oz. powdered sugar
  • 1 tsp. vanilla extract
  • 1/2 stick margarine
Preparation
Combine all ingredients & mix well. Spread on cake.


Frosted Pound Cake

  • 2 1/2 cups sifted flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 cup yogurt
  • 1/2 cup pumpkin ~ canned is alright
  • 1 cup chopped walnuts
Preheat oven to 325° Combine first 5 ingredients and set aside. Cream together butter and sugar until fluffy. Add eggs, one at a time, beating after each addition. Stir in half the flour mixture, yogurt and pumpkin. Add remaining flour mixture, stirring until smooth. Add walnuts. Pour into a greased and floured 9-inch tube pan and bake 55-60 minutes, or until a toothpick comes out clean. Remove from pan onto rack to cool.

Frosting:

  • 1(One) 3-oz. pkg. cream cheese, softened
  • 1/2 tsp vanilla
  • 2 cups sifted confectioners' sugar
  • walnut halves
Beat cheese and vanilla until fluffy. Gradually beat in sugar. Spread over top of cake and garnish with walnut halves.


Baked Grapefruit

  • 4 grapefruits, cut into halves
  • 4 Tbsp. melted butter
  • 3 tsp sugar
  • 1 tsp cinnamon
Loosen sections of the grapefruits. Mix butter, sugar and cinnamon and pour evenly over the grapefruit tops. Broil a few minutes until they turn a light brown. Garnish with a whole strawberry in the center of each grapefruit.


Honey-Nut Apples

  • 2 tablespoons butter or margarine
  • 2 tablespoons brown sugar
  • 1/8 teaspoon ground cinnamon
  • 3 large baking apples, thickly sliced
  • 1/4 cup chopped walnuts
  • 1 tablespoon honey
Melt butter in a large skillet over medium heat. Stir in brown sugar and cinnamon. Add apples and walnuts. Cook, stirring occasionally, for 8-10 minutes or until tender. Remove from the heat and drizzle with honey. Serve warm. Yield: 4 servings.


Pumpkin Apple Streusel Muffins
pumkins add flavor to many recipes
  • 2 1/2 cups all-purpose flour
  • 2 cups sugar
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs, lightly beaten
  • 1 cup pumpkin
  • 1/2 cup vegetable oil
  • 2 cups finely chopped peeled apples
Streusel:
  • 2 tablespoons all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 4 teaspoons butter or margarine, softened
In a large bowl, combine first five ingredients; set aside. In another bowl, combine eggs, pumpkin and oil. Stir pumpkin mixture into dry ingredients just until moistened. Stir in apples. Spoon batter into greased muffin tins, filling 3/4 full. Combine streusel ingredients and sprinkle over batter. Bake at 400° for 20-22 minutes or until toothpick comes out clean. Yield: 2 dozen.


Coconut Pecan Frosting
  • 1 cup sugar
  • 1 can evaporated milk
  • 2 tsp. vanilla
  • 1/2 cup margarine
  • 3 egg yolks, slightly beaten
  • 1 can flaked coconut
  • 1 cup chopped pecans
Put sugar, milk, vanilla, margarine, and the beaten egg yolks in a saucepan. Cook & stir over medium heat until thickened (approximately 12 minutes). Add coconut & pecans. Cool until thick enough to spread on cake layers.
