Heavenly Coconut Cake
This cake is a great gift idea and a sure hit to any dinner party!! I place
small fresh flowers (that compliment the season or occasion) around the base
of the cake.
This needs to be made 2 or 3 days ahead of the time you will serve it.
Blend together and refrigerate overnight:
- 2 cups sour cream
- 2 cups powdered sugar
- 2 12oz packages of frozen coconut, or 3 cups fresh grated coconut
Bake as directed, your favorite white or yellow cake mix(scratch or store bought) in 2 layers.
Split to make four layers. Spread coconut mixture between each layer, and cover sides and top of cake
Cover tightly and store in refrigerator for 2 or 3 days before cutting. This makes a very moist cake that
refrigerates and freezes well.
