Silk's Favorite Entertaining & Gift Ideas II
Tasty Chicken Dip
  • 3 oz. cream cheese, softened
  • 1/2 cup sour cream
  • 1 pkg. Hidden Valley harvest
  • onion dressing mix, dry
  • 2 chicken breast
  • 1/2 cup finely chopped pecans
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 cup Miracle Whip dressing
1.Boil chicken breasts, bone & chop fine
2.With mixer: Mix well, softened cream cheese & sour cream
3.Add dry dressing mix, salt, pepper, & garlic powder
4.Add chopped chicken & pecans
5.Let set in refrigerator for several hours
6.Add Miracle Whip to desired consistency

Peach Jam

ripe Georgia peaches Excellent gift idea!! Place some homemade bread and this jam in a pretty basket, and decorate with ribbons or fresh flowers.

  • 4 cups washed unpeeled peaches
  • 4 cups sugar
Wash & peel any bad spots from peaches. Do not peel. Cut into pieces & whirl briefly in a blender. Do about 2 cups at a time. Pour into a large heavy pan & add sugar. Stir over low heat until sugar is dissolved. Turn heat to high & boil for 12 to 15 minutes, stirring constantly. Cook until syrup is clear and mixture is thickened. Pour into sterilized jars & seal. The skin gives a beautiful color to the jam.
Makes about 5 1/2 pints.

White Fudge

Decorate a basket for Valentines Day or Christmas, and put this pretty fudge in the basket.

  • 2 1/2 cups granulated sugar
  • 1/2 cup dairy sour cream
  • 1/4 cup milk
  • 2 Tbs butter
  • 1 Tbs light corn syrup
  • 1/4 tsp salt
  • 2 tsp vanilla
  • 1 cup coarsely chopped walnuts
  • 1/3 cup quartered candied cherries
Combine sugar, sour cream, milk, butter, corn syrup and salt in a heavy 2 quart sauce pan. Still over moderate heat until sugar dissolves and the the mixture reaches a boil. Boil over moderate heat 9 ~ 10 minutes, to 238° F, (soft ball stage) and if you are making this on a damp day, let the oven temp. go to 240° F.

Remove from heat and allow to stand until lukewarm(110° F) about 1 hour. Add vanilla and beat until mixture just begins to lose its gloss and holds its shape. (Requires very little beating)

Quickly stir in walnuts and cherries -- then turn into an oiled pan (size and shape of pan determines thickness of pieces). Let stand until firm before cutting. Makes 1 1/2 pounds of fudge.

French Dressing
  • 4 tbs. olive oil
  • 2 tbs. wine vinegar
  • 2 tsp. dry mustard
  • 1/4 tsp. black pepper
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 1 tsp. sugar
Combine all ingredients in a jar. Shake until well blended.

Instant Russian Tea

Also suited for gift giving along with Hot Chocolate Mix.

  • 2 cups Tang
  • 1 cup instant unflavored Nestea
  • 1/4 cup instant dry lemonade mix
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
Thoroughly mix all ingredients, and store in airtight containers.
Directions on label or personal use:
Use one teaspoonful for every cup of boiling water.

Chocolate Pecan Sauce

everyone loves pecans This is so easy to make, and really dresses up plain vanilla ice cream. A great way to end a big meal, or a great time saver when u don't have time to make a dessert!!

  • 1/4 cup butter
  • one cup pecans, chopped
  • 2 cups semi-sweet chocolate bits

Sauté nuts in butter until lightly browned. Remove from heat and add the chocolate bits, stirring until melted. Serve hot over vanilla or coffee ice cream.

Vegetable Batter
  • 1/4 cup flour
  • 3/4 cup cornstarch
  • 1 tsp. baking powder
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • 1/2 cup water
  • 1 egg, beaten
  • 1 qt. canola oil
Sift dry ingredients together. Add egg & water. Beat until smooth. Pour oil into a deep skillet & heat to medium heat. Dip vegetables (onion, mushrooms, or squash ) a few at a time into the batter. Drop into heated oil & fry 2 or 3 minutes, turn one time. Cook until brown. Drain on paper towels.

Easy Fudge
  • 12 oz. pkg. chocolate chips
  • 1 scant cup Eagle Brand Milk
  • 3 tbs. Butter or Margarine
  • 2 tbs. Vanilla Extract
  • 1 1/2 cups pecans, chopped
Heat margarine, milk & chocolate chips until melted.
Add vanilla & pecans. Pour into an 8x8 pan. Cool & cut in squares.

Chili Pie

Quick and easy snack!!

  • 2 - 12 oz cans Hormel Chili with beans
  • 1/2 bag crushed Frito-Lay corn chips
  • 1 small jar taco sauce
  • 2 cups shredded cheddar cheese
Layer the ingredients in a casserole dish as listed above and bake 20 minutes in a 375° oven!

No Mess Meal

Great for outdoor grilling and picnics!! For each guest you will need:

  • 1 large hamburger patty or chicken breast
  • 1 potato, cut into slices
  • 1 onion, cut into slices
  • 1 carrot, cut into slices
  • 1/4 cabbage, sliced thinly
  • 3 Mushrooms, sliced
Place meat on a large piece of heavy-duty aluminum foil. Sprinkle with salt and pepper, or McCormick's Seasoning Salt. Add remaining ingredients in order. Dot each with 2 tablespoons butter, lightly sprinkle veggies with seasoning salt or salt and and pepper. Seal foil tightly. Cook on grill about 1 hour.

Create your own versions of this simple meal depending on the fresh veggies available.

Place the meal bundles on paper plates and open. (no dishes or pots and pans to wash) Serve with bread and drink. These may also be cooked in the oven, at 350° for 1 hour.

Southern Salted Pecans
  • 1/2 cup cooking oil
  • 4 cups shelled pecans (1 lb.)
Heat oil in skillet until bubbles appear when a nut is added. Add nuts one cup at a time. Cook over very low heat until lightly browned. With a slotted spoon, remove nuts to absorbent paper. Sprinkle with salt. Makes 4 cups.
