Silk's Broccoli Salad
- 8 slices of bacon
- 4 cups of raw broccoli florets(no stems)
- 1/2 cup raisins(optional)
- 1 small onion, chopped fine(optional)
- 1 cup Miracle Whip
- 1/4 cup sugar
- 3 Tbs vinegar
Fry or microwave bacon until crisp, and set aside. Then mix all but bacon and
broccoli. In an airtight container, put the broccoli and bacon, then pour the
mixture over the broccoli and bacon. Put in the refrigerator overnight, or at least
5-6 hours.
Sesame Chicken Pasta Salad
Combine in large bowl:
- 6 oz cooked pasta spirals
- 1/4 cup sesame seeds
- 1/4 cup olive oil
- 1/4 cup sesame oil
- 1/3 cup soy sauce
- 1/3 cup rice vinegar
- 3 tablespoons sugar
- 1/2 teaspoon salt & pepper
- 3 cups cooked, diced chicken breast
- 1/2 cup minced parsley
- 1 cup blanched broccoli flowerets (to blanch put flowerets into boiling water and cook 3 minutes until tender crisp)
- 1 bunch sliced green onions
Toss together and serve with a chilled crisp and fruity white wine if desired.

Mandarin Orange Salad
- 1 can (20 ounces) pineapple chunks
- 1 can (15 ounces) mandarin orange segments
- 1 package (3 ounces) tapioca pudding mix
- 1 package (3 ounces) cook and serve vanilla pudding mix
- 1 jar (6 ounces) maraschino cherries, drained
- 2 medium firm bananas, sliced
Drain pineapple and oranges, reserving juices; set fruit aside. Add water to juices to equal 3 cups;
pour into a saucepan. Add pudding mixes; cook over medium-high heat. Remove from the heat; cool.
Place pineapple, oranges and cherries in a 2-qt. bowl; pour dressing over and stir to coat. Chill for
several hours. Add bananas just before serving. Yield 6-8 servings.
Veggie Pasta Salad
- 1 16 oz. pkg. small shell pasta - cooked, rinsed and drained
- 1 16 oz. Wishbone Italian dressing (use 8 oz.)
- 1 bottle of McCormick salad supreme (use 1/2 of bottle)
- 2 medium cucumbers, chopped
- 3 medium tomatoes, chopped
- 2 small, or 1 large red onion , chopped
- 2 medium green peppers, chopped
- 1 small can of ripe olives, halved
Combine all ingredients and marinate overnight.
Cucumbers-Onion-Tomato Salad
- 4 small cucumbers, peeled and sliced
- 2 medium onions, thinly sliced, broken apart
- 2 medium tomatoes, peeled and thinly sliced
- 1 cup vinegar and oil or Italian salad dressing
Combine all ingredients and chill several hours.
Sweet and Sour Fruit Salad
- 2 grapefruit, peeled, seeded and sectioned
- 2 oranges, peeled, seeded and sectioned
- 1 can 151/4 oz can unsweetened pineapple chunks, un-drained
- 1/2 cup chopped dates
- 1/2 cup chopped pecans
- 2 tablespoons sugar
- 2 tablespoons orange juice or orange-flavored liqueur
Combine all ingredients, stirring gently. Chill salad well before serving.
Macaroni Salad
- 1 (8-ounce)package macaroni
- 2 small cucumbers, peeled and chopped
- 1 small onion, chopped
- 1 tomato, peeled and chopped
- 2 tablespoons sweet pickle relish
- 4 to 6 green olives, chopped
- 1/4 cup Miracle Whip
- 1/2 cup cheese, cubed
Cook macaroni according to package directions. Drain and add remaining
ingredients; stir well. salt and pepper to taste. Serve warm or chill 2
hours. *optional* Add chunks of ham, turkey or chicken and have a meal.
